Meatless Monday: quinoa bowls
Happy Monday!!!
I love light and vegetable filled grain bowls as a summer lunch. It’s so easy to prep and customize by day which pretty much guarantees that I don’t forget lunch! 😉
Lately I’m reaching for Quinoa, cucumbers, peppers, harissa roasted chickpeas, and Trader Joe’s goddess dressing. Maybe a sprinkle of feta or maybe switch that for a lemon vinigarette for a true vegan meal. It’s the best!!! 😋
